Method
Add the blanco tequila, espadin mezcal, fennel juice, agave syrup and lime juice into a shaker with ice and shake until well-chilled.
Double-strain into a Collins glass over fresh ice.
Top with club soda.
Garnish with fennel fronds and fennel pollen.
